Lipase is an enzyme that breaks down fats to fatty acids and glycerol, or other alcohols. Since the lipase enzyme deteriorates in solution over time, you receive a bottle with the premeasured solid. When you're ready to use it, just add 30 mL of water to the bottle and shake to make the 5% solution. The lipase is sourced from porcine pancreas.
